Having a full on Roast on Sunday with yorkshires, Gravy and boiled to death vegetables every week isn’t the best for your health. Every now and again a mega roast is needed for sure but if you don’t fancy being comatose post roast then this recipe is for you!
What’s needed: pork shoulder joint de-boned, I used 1kg, butternut squash, a few sweet potatoes, spring greens or any sort of cabbage.
Put your oven on full at around 220. Chop an onion and put it in a baking tray with a bay leaf, a few cloves of garlic, s + p. plonk the pork on top of this and give the skin a rub down with some olive oil and salt. Wack it in the oven for approx 25 mins per 500g plus an extra 25 mins. Cook on this high heat for 25 mins then turn down to 180.
