Brown Rice, Fennel, Chickpeas, and Oranges

Here’s an awesome recipe from Forks Over Knives!  I changed it slightly, by adding green onions instead of the pepper flakes, and topping it with goat cheese.  I also added some of that yummy orange vinegar from Trader Joe’s.  Next time I may add an extra orange, because it only calls for one.  We’re gonna have it with chicken for dinner tonight (and I may sneak some with lunch).
