Peanut butter is a great source of protein, fiber, and heart healthy monounsaturated fats. But it’s still best in moderation since it is, in fact, high in fat and calories. I rarely let myself enjoy a comforting and satisfying PB&J sandwich because of the calories and high fat content. Even though it’s “the good fat”, I tend to go over the limit after I generously spread a mound of peanut butter on my bread (and then lick the knife clean).
While working with the hospital cooks during my internship, I discovered an awesome way to decrease the fat and calories in peanut butter so I can generously slather it on my sandwich without going overboard on my calorie intake.
