Greek Yogurt Chicken Enchiladas

I LOVE Mexican food. I mean really really love it, but eating out at Mexican restaurants is typically full of cheesy and chippy temptations. What’s a girl to do? Maker her own! These are super easy and protein packed – great for a post-workout recovery meal or a treat when you want a flavor-packed dish.



6 whole wheat tortillas

1 cup cooked chicken, shredded

1 cup Greek yogurt (0 or 1%)

1 Tbsp cumin

1 Tsp cayenne

Juice of one lime

5 oz green chiles – fresh or canned

8 oz Enchilada sauce (I used canned salsa verde, but this is a great recipe if you have time and tomatillos!)

Shredded cheese to taste (optional)


Pre-heat oven to 350

In a bowl, mix Greek yogurt, spices and green chiles

Add chicken to yogurt mixture

Add half the enchilada sauce to the bottom of a greased pan
