Oven-roasted plantain and black bean burrito

This recipe was inspired by a post by  fun-loving west coast blogger, Vittle Monster, who ate a non-vegan version of this dish at The Little Chihuahua in San Francisco. The original recipe had cheese and fried plantains. I knew I could do it one better.

Ingredients

  • 1 plantain, ripe but not brown
  • 1 cup chopped fresh tomatoes
  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped sweet pepper
  • 1 ear of corn, cooked and shucked
  • juice from 1/2 a lime
  • 1/4 tsp salt
  • hot sauce, to taste
  • 1 cup or can black beans, drained
  • 1/2 small can of Hatch chiles
  • 1/4 tsp chili powder
  • 1 ripe avocado, chopped
  • 1/4 head of red cabbage, chopped
  • 4 leaves Romaine lettuce, chopped
  • tortillas, warmed

Cut the plantain in 1/2-inch slices. Spray with coconut oil or lightly toss with high-heat oil. Oven roast at 375 degrees F for 15-20 minutes, flipping the slices halfway…
