Ribollita: Hidden Bean Soup

Here’s another recipe that starts with a bag of $1.50 dried beans.  And this one is great to trick your non-bean eating family member into eating healthy white beans.

Ingredients:

1 pound bag of white beans

1/4 cup olive oil

2 white onions, chopped

3 carrots, chopped

3 stalks of celery, chopped

3 tbsp/6 cloves garlic, minced

1 t pepper

1t salt

1/4 t red pepper flakes

6 oz can tomato paste

4 cups savoy cabbage, chopped

4 cups kale, chopped

1/2 cup fresh basil, chopped

4 cups vegetable stock

Directions:

Soak the beans overnight.  But if you cannot remember to do this, as is the case with me, do a quick boil.  Cover the beans in cold water, cover, bring to a boil, remove from the heat, and let sit for one hour.  Change the water, bring to a boil and simmer for 45 minutes.  Set the beans aside…
