Spaghetti Sauce with Fresh Tomatoes and Herbs

This is a quick, easy to make spaghetti sauce using fresh tomatoes and herbs. I used Roma tomatoes but you can use any kind of tomatoes or even a can of tomatoes if fresh tomatoes aren’t available.

The sauce can be served plain over pasta, or mixed with either cooked lentils or cooked ground meat for a heartier meal.

Water or olive oil
1 cup chopped onion
2 garlic cloves, peeled and minced
2 cups diced fresh tomatoes or 1 (14-16 ounce) can of diced tomatoes
1 (15 ounce) can tomato sauce
1/4 cup chopped fresh parsley
fresh basil (I used about 6 large leaves)
fresh oregano (I used about 12 small leaves)
1/8 teaspoon pepper
salt to taste
grated Parmesan cheese (if desired)
cooked lentils or ground meat (if desired)
