Dan and I were both able to relax at home together Monday, which is good seeing as we won’t be able to see each other for a month! I depart for Belize on Saturday and he leaves before I get back on a trip of his own. Dubai, Vienna, and Romania with his parents (so jealous…)
One of my good friends from work gave us a bottle of Veuve Clicquot as an early going away present so we cracked that open and garnished it with some fresh strawberries. To begin our meal we had kale chips and our favourite East Coast Malpeque oysters paired with a strawberry mignonette. For our entree Dan made herb crusted wild hoki (did you know hoki is the fish McDonald’s uses in their filet-o-fish sandwiches??) and served it with a roasted vegetable/potato medley and a mushroom skillet. A perfect way to start the week!
