L.A. Theory

I grew up in the south of Russia, a region of beautiful landscapes and one of the only places in the entire country where such a large number of cultures, histories and culinary flavors come together. I grew up consuming flavors of the Middle East as frequently as those of fine French traditions. Though the one cuisine I can’t recall having was Indian. It was never something I thought about and as a child, I suppose I didn’t connect the dots that every culture had their own flavors. To me, it was all one culture, filled of aromas, textures and memories.

Fast forward a few years. I’m in L.A. at this point, in the kitchen of the parents of my now ex. His mother, who is British, proclaims that well be having curry for dinner. By that point, the few Indian dishes i had tried had either been greatly overwhelming…
