Chilli, cheese and onion muffins

I hope you are all well, I’ve been struggling today so instead of mulling over how shit my life is, I’m blogging. And these muffins are healthy, 182 calories for one! Not bad.

Makes 12
Half a chilli (cut into tiny pieces)
60g onion, diced
1/2 tsp dried herbs
300g plain flour
1 tbsp baking powder
1/2 tsp bicarbonate of soda
1/8 tsp salt
250ml milk
2 large eggs
85g unsalted butter, melted
100g mature cheddar, grated

1. Preheat oven to 170C/325F/Gas Mark 3 and line a muffin tin with cases.
2. Melt the butter in a frying pan and add the onion, mixed herbs and chilli over a medium heat until they are soft and glossy. Set aside.
3. Sift together the flour, bicarbonate of soda, baking powder and salt. Pour the milk into a jug, break in the eggs and whisk together by hand. Make a well in…
