The Benefits: Sweet potato is packed with health properties. It is very rich in beta carotene which can help with skin conditions such as acne and eczema. Tuna also contains lots of tryptophan, which is a building block of melatonin.
The Verdict: Everyone loves a good jacket right? With sweet potato it is even better. I just think you get a much smoother, yummier taste. Tuna is also incredibly good for you and accompanies the potato perfectly. I used cottage cheese but if you are not a fan then natural yogurt or cream cheese also work well. After three days of salads I did enjoy the change of a jacket and it really was satisfying and super easy to transport.
