Vegetarian Stuffed Peppers

Prep time: 45 minutes || Cook time: 35 minutes || Servings: 6 peppers

Ingredients

For the stuffed peppers:

  • 6 large peppers
  • 1 ½ cups basmati rice
  • 1 ½ cups cooked green lentils
  • 1 large onion, chopped
  • 5 garlic cloves, mined
  • 1 package of Portobello mushrooms, chopped
  • 1 ½ cups celery, chopped
  • A handful of Italian parsley, chopped
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 2 teaspoons ground ginger
  • 3 tablespoons olive oil
  • Salt & pepper

For the sauce:

  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 3 tablespoons tomato paste
  • 1 ½ cups vegetable stock (or water)
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 4 tablespoons brown sugar
  • 1 teaspoon white vinegar
  • Salt & pepper

Directions

  1. Cut tops off peppers and remove seeds and set aside.
  2. Cook the lentils according to the directions on the package.
