Savory Mashed Sweet Potatoes

When I think sweet potatoes I usually think the ooey gooey covered with brown sugar and marshmallow kind served at thanksgiving, and growing up I didn’t think I liked sweet potatoes.  When I discovered some simple recipes that weren’t overly sweet, a love affair with the veggie began.  So if you’re a so-called sweet potato hater, don’t hesitate to give this recipe a try.  It’s just sweet enough with yummy melt in your mouth flavor.  If you’re a sweet potato lover but prefer the uber sugary kind, you should also give them a try, I think you’ll be surprised how good the simplicity tastes.


One interesting thing about this recipe is that the sweet potatoes aren’t boiled before mashing.  They are very slowly sauteed in a butter/milk mixture so none of their flavor is lost in the water.  It’s a strange method, but just trust it, they do get soft…
